
Spiced Chai Colada
Ingredients:
- • 1/2 bottle of Stella Rosa® Pineapple
- • 2 cups of pineapple, diced
- • 2 oz. spiced rum
- • 1 cup ice
- • 3 cups of vanilla bean ice cream
- • 1 oz. chai syrup (see instructions below)
- • Cinnamon stick (for garnish)
- • 2 tbsp. whole black peppercorns
- • 1 heaping tbsp. fresh chopped ginger
- • 3 cloves, whole
- • A star anise
- • 4 cinnamon sticks
- • 6 green cardamom pods
- • 1/3 cup sugar
- • 1/3 cup water
Instructions:
- Bring sugar and water to just under a boil. Add spices. Stir to combine.
- Turn down heat to low and simmer for 10 minutes. Remove from flame and let sit covered for an hour.
- Strain mixture into an airtight container. Will keep refrigerated for up to a month.
- In a blender, combine rum, Stella Rosa® Pineapple, pineapple slices, chai syrup and ice.
- Blend and pour into a tiki glass. Garnish with a cinnamon stick and enjoy!
