The Best Walking Tacos

Ingredients:

  • 2 lb ground beef
  • 1 cup chopped onion
  • 3 tablespoon Contadina® tomato paste
  • 1 (29-oz) can Contadina® tomato sauce
  • 1 (14.5-oz) can Contadina® diced tomatoes
  • 2 cups College Inn® beef broth
  • 2 (1-oz) envelopes taco seasoning mix
  • 2 (9.25-oz) bags corn chips
  • 1 (8-oz) bag shredded lettuce
  • 2 (8-oz) pkg shredded Mexican blend cheese
  • 1 (16-oz) carton sour cream

Instructions:

  1. Cook beef and onion in a large Dutch oven over medium heat until beef is browned and crumbly; drain and return to pot. Add tomato paste; cook, stirring, 2 minutes. Add tomato sauce, diced tomatoes, broth, and seasoning mixes; bring to a boil, reduce heat, and simmer 20 minutes.
  2. Divide chips among bowls. Top with chili, lettuce, cheese, and sour cream.
