Mediterranean Shrimp

Ingredients:

  • 2 lb peeled and deveined large, raw shrimp
  • 2 tsp Greek seasoning
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 cup chopped onion
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 3 tbsp Contadina® tomato paste
  • 1 (14.5-oz) can Contadina® diced tomatoes
  • 2 tbsp capers
  • 3 tbsp minced fresh oregano
  • 1 cup crumbled feta cheese

Instructions:

  1. Sprinkle shrimp with seasoning. Melt butter with oil in a large nonstick skillet over medium-high heat. Add shrimp, and cook 2 minutes per side or until almost done. Remove from skillet and set aside.
  2. Add onion, bell pepper, and garlic to skillet; cook 5 minutes or until vegetables are tender. Add tomato paste; cook, stirring, 2 minutes. Add diced tomatoes and capers; cook until mixture is slightly thickened. Return shrimp to skillet and cook until shrimp are done.
  3. Stir in oregano and sprinkle with cheese. Serve over Crispy Polenta Cakes recipe.
