Honey-Tomato Basil Vinaigrette

Ingredients:

  • 1/4 cup olive oil
  • 1/4 cup Contadina® tomato sauce
  • 1/4 cup red wine vinegar
  • 2 tbsp Contadina® tomato paste
  • 1 tbsp honey
  • 3 tbsp minced fresh basil
  • 1 (10-oz) container spring mix
  • 4 carrots, sliced into ribbons
  • 1 english cucumber, sliced into ribbons
  • 1/4 cup thinly sliced red onion
  • 1 cup shaved parmesan cheese

Instructions:

  1. Whisk together olive oil, tomato sauce, vinegar, tomato paste, and honey in a bowl until blended. Stir in basil, and season with salt and pepper, if desired.
  2. Meanwhile, toss together spring mix, carrots, cucumbers, onion, and cheese in a large bowl. Add desired amount of vinaigrette; toss.
  3. Whisk together olive oil, tomato sauce, vinegar, tomato paste, and honey in a bowl until blended. Stir in basil, and season with salt and pepper, if desired.
  4. Meanwhile, toss together spring mix, carrots, cucumbers, onion, and cheese in a large bowl. Add desired amount of vinaigrette; toss.
