Deep Dish Sausage and Spinach Pizza

Ingredients:

  • 1 lb ground sweet Italian sausage
  • 1 (8-oz) pkg sliced baby portobello mushrooms
  • 1 cup finely chopped onion
  • 3 cloves garlic, minced
  • 3 tbsp Contadina® tomato paste
  • 1/2 tsp crushed red pepper
  • 1 (14.5-oz) can Contadina® diced tomatoes, drained
  • 1 (15-oz) can Contadina® tomato sauce
  • 1 (10-oz) container baby spinach
  • 1 tbsp olive oil
  • 2 tsp yellow cornmeal
  • 1 (15-oz) already rolled out bakery pizza dough
  • 3 cups shredded mozzarella cheese, divided

Instructions:

  1. Preheat oven to 400°F. Cook sausage, mushrooms, onion, and garlic in a large skillet over medium-high heat until sausage is browned and crumbly; drain and return to skillet.
  2. Add tomato paste and crushed red pepper; cook, stirring, 2 minutes. Add diced tomatoes and tomato sauce; cook 5 minutes. Gradually stir in spinach until wilted.
  3. Meanwhile, brush oil over bottom and up sides of a 12-inch cast iron skillet. Sprinkle with cornmeal. Press dough into bottom and up sides of skillet. Sprinkle with 2 cups cheese. Spread sausage mixture over cheese. Sprinkle with remaining cheese.
  4. Bake 25 to 30 minutes or until crust is golden brown and pizza is bubbly.
