Chicken Parmesan Sliders
Ingredients:
- 2 lb boneless, skinless chicken breasts
- 1 tbsp Italian seasoning
- 3 tbsp olive oil, divided
- 1 cup chopped onion
- 3 cloves garlic, minced
- 3 tbsp Contadina® tomato paste
- 1 (15-oz) can Contadina® tomato sauce
- 1 (8-oz) pkg mozzarella cheese slices
- 1 (12-count) pkg slider buns, split
- 1 (0.5-oz) pkg fresh basil, separated into leaves
- 1/2 (3.5-oz) stick garlic butter, melted
- 1/4 cup grated Parmesan cheese
Instructions:
- Cut chicken into 2-inch pieces, sprinkle with seasoning. Season with salt and pepper, if desired. Cook chicken, in batches, in 2 Tbsp hot oil in a large skillet over medium heat 4 to 5 minutes per side or until done. Remove from skillet.
- Cook onion and garlic in 1 Tbsp hot oil in same skillet over medium heat until onion is tender. Add tomato paste; cook, stirring 2 minutes. Add tomato sauce; cook, stirring 5 minutes.
- Nestle chicken in sauce; top each chicken with sliced cheese. Simmer until chicken is heated through and cheese is melted.
- Serve chicken and sauce on slider buns with basil leaves. Brush tops of buns with garlic butter and sprinkle with grated cheese.
