Chicken Parmesan Sliders

Ingredients:

  • 2 lb boneless, skinless chicken breasts
  • 1 tbsp Italian seasoning
  • 3 tbsp olive oil, divided
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 3 tbsp Contadina® tomato paste
  • 1 (15-oz) can Contadina® tomato sauce
  • 1 (8-oz) pkg mozzarella cheese slices
  • 1 (12-count) pkg slider buns, split
  • 1 (0.5-oz) pkg fresh basil, separated into leaves
  • 1/2 (3.5-oz) stick garlic butter, melted
  • 1/4 cup grated Parmesan cheese

Instructions:

  1. Cut chicken into 2-inch pieces, sprinkle with seasoning. Season with salt and pepper, if desired. Cook chicken, in batches, in 2 Tbsp hot oil in a large skillet over medium heat 4 to 5 minutes per side or until done. Remove from skillet.
  2. Cook onion and garlic in 1 Tbsp hot oil in same skillet over medium heat until onion is tender. Add tomato paste; cook, stirring 2 minutes. Add tomato sauce; cook, stirring 5 minutes.
  3. Nestle chicken in sauce; top each chicken with sliced cheese. Simmer until chicken is heated through and cheese is melted.
  4. Serve chicken and sauce on slider buns with basil leaves. Brush tops of buns with garlic butter and sprinkle with grated cheese.
