Honey-Tomato Basil Vinaigrette
Ingredients:
- 1/4 cup olive oil
- 1/4 cup Contadina® tomato sauce
- 1/4 cup red wine vinegar
- 2 tbsp Contadina® tomato paste
- 1 tbsp honey
- 3 tbsp minced fresh basil
- 1 (10-oz) container spring mix
- 4 carrots, sliced into ribbons
- 1 english cucumber, sliced into ribbons
- 1/4 cup thinly sliced red onion
- 1 cup shaved parmesan cheese
Instructions:
- Whisk together olive oil, tomato sauce, vinegar, tomato paste, and honey in a bowl until blended. Stir in basil, and season with salt and pepper, if desired.
- Meanwhile, toss together spring mix, carrots, cucumbers, onion, and cheese in a large bowl. Add desired amount of vinaigrette; toss.
- Whisk together olive oil, tomato sauce, vinegar, tomato paste, and honey in a bowl until blended. Stir in basil, and season with salt and pepper, if desired.
- Meanwhile, toss together spring mix, carrots, cucumbers, onion, and cheese in a large bowl. Add desired amount of vinaigrette; toss.
